Shoot removal

Shoot removal happens in spring, when the new shoots are about 10 to 30 centimeters long. For each grape variety , a certain amount of shoots is desired, all the others will be removed. These can be shoots, that will not have any grapes (shoots on the old trunk wood), shoots that are infertile or double shoots. This way, the remaining shoots will be supplied with sufficient nutrients.

Within the vineyards there are sites. A site refers to a geographical area, such as a vineyard, whose name and boundary are recorded and protected by law. A single vineyard site consists of several cadastral sites.

Site name

A site (German: "Lage") is a vineyard, whose borders are defined by wine law, which is provided with a specific official name registered by the Chamber of Agriculture. Its name does not have to be indicated on the label, but is usually found there (not on brands or varietal wines). If the site name is used then the community name must be added as well. The site is the narrowest geographical indication of origin. As part of the new VDP quality declaration, site wines are the highest quality.

Screw top

The screw top has been an established wine bottle closure for some years now. Its uncomplicated use and reclosability have led to the replacement of the cork. Due to the high cost of cork, and cork flavour in the wine, the screw top increased in popularity. The good sealing of the screw cap ensures that the wine maintains its freshness and that fruit aromas are preserved.

Secco

Secco, also called pearl wine, has an increased carbonic acid content. During the fermentation of grape must the carbonic acid is produced. For Secco production it is collected and later addded to the wine again, once the fermentation is over. For simpler pearl wines, the carbon dioxide is not collected, but technical carbonation is added after fermentation. The pressure of the Secco is lower compared to sparkling wine. Secco has a maximum pressure of 2.5 bar, sparkling wine, however, has at least 3 to 6 bar.

In Germany, a sparkling wine, that was produced with a second ferentation, is caled Sekt. During the second fermentation in the bottle, carbonic acid is formed. Sparkling wine must contain at least 10% by volume and must be secured by a wire basket and sometimes even with an Agraffe, due to the high pressure (at least 3 to 6 bar pressure). For every bottle of sparkling wine, the winemaker has to pay one euro of sparkling wine tax.

Since 1992, there has been a new quality category for Rheinessen wines due to an initiative of the Weinbauverband Rheinhessen. »Selection Rheinhessen« are wines of regional character and of the highest standard, also in international competition. They are made from classic grape varieties grown in old vines and hand harvested. Selection Rheinhessen wines do not only have the German wine seal, but also a banderole especially designed for the range.
