Handkäs with music

A "Mainzer Handkäse" is prepared with vinegar, oil, onions, pepper and some garlic (it is especially well covered in a stoneware pot, covered with a vinegar-soaked linen loaf). A dry wine tastes great with it. And yet, when talking about music, that does not mean that it comes with a little marching band, but rather refers to the grand finale that the human body is going to produce, thanks to the onions.

Yeast

Yeasts are mushrooms and, like algae and bacteria, belong the single-celled plants making them the simplest microorganisms in the world of plants. The conversion of the sugar into alcohol is accomplished by yeasts. They multiply by separating eviscerated cells. The energy is provided by the sugar, which is dissolved in the grape must as glucose and fructose. At high temperatures, the yeasts multiply rapidly and cause a stormy fermentation.

Autumn

In Rheinhessen, autumn does not only describe the season (September, October, November), but especially the time of grape harvest, which takes place in these months. "Hochgewächs"

The term "Hochgewächs" applies only to Riesling, which has the QbA quality level. Furthermore, the must weight of the wine must be at least 10 ° Oechsle above the guideline value for Riesling QbA. Hoffest

"Hoffest"

German expression for a festival in the winery. It is an individual event linked to the individual winery and an addition to the wine festivals. It does not have a fixed date, but only takes place in the summer months. Tables and benches are placed everywhere, from the tractor's parking lot to the barrel cellar and one can taste the winery's wines in combination with hot and cold Rheinhessen dishes.

Narrow pass

A path that was formed into its surrounding over the centuries due to constant use. For example, by using wagons and livestock as well as outflowing rainwater. Hollow paths are found only in soils with a strong loess layer.

Imbs

"Imbs"

"Imbs" is the Rheinhessen expression for a snack, deriving from the German expression for snack ("Imbiss"). It refers to a rustic meal in the vineyard aroud noon. The winemaker brough it in a handle basket, and had it sitting on the floor or sitting on an upside down bucket. IT consists of homemade sausage (liver sausage, black pudding), jacket potatoes ("Gequellte", "source men") and » Soft cheeses, which lay on a tablecloth laid out on the ground.

Vintage

When the German folk song is stating: »Be careful of the vintage« , that definitely is justified, as each vintage has different qualities. The vintage does not actually need to be given on the label, but it is common practice. Thanks to the differences given by nature (e.g. different maturity), each year has different qualities.

Virgin Wine

"Jungfernwein"

German expression for "virgin wine". It is not a wine made for virgins, however, but a wine made from the first crop of a newly planted vineyard (usually in the second or third year after planting).
